Thomas approach to mixology is influenced by his multicultural background and personal life. His wife introduced him to the art of Japanese fermentation – techniques like miso, shoyu, and sugar fermentation – which he now weaves into his modern cocktail creations to add depth, complexity, and character. Yet, his love for the classics remains unwavering, with The Savoy Cocktail Book having long served as his trusted guide.<\/p>\n
At GOLVET Thomas envisions a cocktail program that celebrates the seasons while reviving forgotten classics, giving them fresh relevance through thoughtful innovation.<\/p>\n
In recent years, Thomas has also delved deeply into the world of wine, expanding his palate and perspective as a sommelier. When GOLVET’s Head Sommelier, Andrea, encouraged him to bring his vision and expertise to the bar, Thomas saw an opportunity to create something truly special.<\/p>\n
