Thomas Isabella was born in Calabria to Italian and Polish parents. He brings a rich blend of cultures and creativity to his craft. Having also lived in Zielona Góra, Poland, before settling in Berlin over two decades ago, Thomas journey has been one of exploration, passion, and evolution.
Originally drawn to Berlin by his love for music and architecture, he eventually discovered his true calling in gastronomy. Over the years, Thomas has worked across many of the city’s restaurants, honing his skills behind the bar and developing a deep respect for ingredients, process, and balance. To him, the bar is not merely a station—it’s an extension of the kitchen, where creativity and discipline meet craftsmanship.
Thomas approach to mixology is influenced by his multicultural background and personal life. His wife introduced him to the art of Japanese fermentation - techniques like miso, shoyu, and sugar fermentation - which he now weaves into his modern cocktail creations to add depth, complexity, and character. Yet, his love for the classics remains unwavering, with The Savoy Cocktail Book having long served as his trusted guide.
At GOLVET Thomas envisions a cocktail program that celebrates the seasons while reviving forgotten classics, giving them fresh relevance through thoughtful innovation.
In recent years, Thomas has also delved deeply into the world of wine, expanding his palate and perspective as a sommelier. When GOLVET’s Head Sommelier, Andrea, encouraged him to bring his vision and expertise to the bar, Thomas saw an opportunity to create something truly special.
Now, as GOLVET’s Bar Manager, Thomas combines his experience, curiosity, and passion to craft a bar experience that mirrors the restaurant’s philosophy - creative, refined, and deeply rooted in respect for both tradition and innovation.
